Saffron has been used for centuries as a culinary spice to elevate flavor and add complexity to a dish. Referenced in ancient texts like TheLegend of Sargon of Akkad and the Bible, it’s rich history dates back to at least 2300 BC. It likely originated in Persia, Greece, Mesopotamia, or Kashmir. Traditionally, saffron has been grown in arid climates like Iran, Spain, India, Afghanistan, and Morocco. Recently, however, U.S. farmers and researchers have begun to see successful harvests in the Western Hemisphere. Seven Sparrows, in partnership with Fairview Farms, is excited to be one of the few certified organic farms in New York State to be able to offer Finger Lakes-grown saffron.
In addition to it’s well-known culinary value, saffron has also been widely used medicinally. It has been found to have many health benefits:

helps relieve stress and anxiety
improves mood
may help reduce age-related cognitive decline
helps improve retinal health
soothes pre-menstrual discomfort
may support overall reproductive health
